This isn't just bread. It's a masterpiece of flavor and texture, born from time-honored tradition and a vibrant, living starter.
Unlike quick-rise breads, sourdough undergoes a long, slow fermentation using a living starter. This isn't just for flavor; it's a natural digestive aid. The beneficial bacteria in the starter essentially "pre-digest" some of the complex carbohydrates and proteins (like certain glutens) in the flour. This means less work for your digestive system, which usually translates into less bloating and discomfort for people.

White & Rye

This isn't a heavy, dense rye. Instead, the small addition of rye flour works its magic, infusing the dough with a subtle, nutty depth and a delicate, rustic aroma that beautifully complements the clean flavor of the white flour.

Baguette tradition

Crafted with care and a long fermentation process, French baguettes achieve that coveted deep golden crust, impossibly airy  interior  and a nuanced flavor profile that truly sets it apart.

Greek yoghurt & honey

The addition of rich Greek yogurt creates an exceptionally tender, moist crumb with a delightful chew, while a touch of pure honey adds a subtle, natural sweetness that perfectly complements the characteristic sourdough tang. A truly harmonious loaf.

Signature sourdough, infused with premium dark cocoa for a profound chocolate base. I then add an abundance of high-quality chocolate chips, ensuring a molten burst of sweetness with every slice. The subtle, characteristic tang of the sourdough provides an unexpected yet exquisite balance, cutting through the richness to create a sophisticated and harmonious flavor profile.

Raisin & cinnamon

Crafted with our traditional slow fermentation process, this loaf harmoniously blends the characteristic tangy depth of sourdough with the delightful sweetness of sun-ripened raisins and the warming spice of Ceylon cinnamon.

Apple and cinnamon

We've infused our signature tangy sourdough with the heartwarming sweetness of tender apple pieces and the aromatic spice of cinnamon. This creates a truly delightful loaf with a moist, fragrant crumb and a subtle crunch from the crust. It's the perfect blend of wholesome and indulgent.

Sea salt & rosemary focaccia

This focaccia has a light, airy texture from lots of olive oil, with that familiar dimpled top. We've added fresh rosemary for its subtle, unique flavour, which pairs beautifully with the bread's richness. To finish, a sprinkling of flaky sea salt gives you a lovely crunch with every soft bite.

The base will be either puff pastry  (hundreds of airy, buttery layers for a delicate, crisp finish), Breton butter cookie (thick, rich, and crumbly with a hint of salt – a unique, rustic base), or pâte sablée (tender and melt-in-your-mouth, offering a sweet, fine crumb perfect for any filling).  As for the toppings, it depends on the chef's creativity...

Tarte Bourdaloue is a classic French dessert.  It begins with a buttery, crisp shortcrust pastry. Nestled inside is a rich, creamy almond filling, known as frangipane.  Crowned upon this are luscious poached pears; their delicate sweetness and soft texture a perfect contrast to the nutty frangipane below.
